Grilled Apricot with Vanilla Ice Cream and Pistachios

These desserts are for days when I have guests over on short notice and everything has to be prepped quickly. This dessert works just as well with peaches or nectarines and any other ice cream flavours and it's also been very popular on those long BBQ evenings with friends.

Apricots contain around 8,5g of sugar per 100 grams as well as 40 calories. The dried variety has a concentrated 240kcal but its nutritional value is 5 times as high. But whether fresh or dried - health-wise, apricots are an absolute top snack. They are rich in pro-vitamin A (beta-carotene), contain vitamins B1, B2 and C as well as potassium, calcium and phosphorus. A veritable beauty and health elixir, brilliant for skin, hair and nails. Apricots support our immune system and circulation and their anti-bacterial, germ-killing properties are good for our digestive system.

Grilled Apricot with Vanilla Ice Cream and Pistachios

Ingredients:

  • 8 apricots
  • 6 tsp honey
  • 1 TBSP butter
  • 8 scoops of Bourbon vanilla ice cream
  • 4 TBSP chopped pistachios

Preparation:

  1. Halve and de-stone the apricots. Drizzle half the honey onto the insides. Melt the butter in a pan and grill the apricots for 2-3 minutes each side.
  2. Put four grilled apricot halves each on a plate and drizzle with the rest of the honey. Serve alongside 2 scoops of vanilla ice cream for each plate and garnished with the chopped pistachios.
